What is Sabudana Khichdi?

Sabudana Khichdi is a traditional Indian dish made primarily from sabudana, also known as tapioca pearls. It’s gluten-free, making it a favorite among those with dietary restrictions. The dish is typically prepared with a few essential ingredients and is loaded with energy, perfect for sustaining you throughout the day, especially when fasting.

Ingredients Required

Primary Ingredients

  1. Sabudana (Tapioca Pearls) – 1.5 cups
  2. Raw Peanuts – ½ cup
  3. Potatoes – 2 large (boiled and diced)
  4. Cumin Seeds – 1 tsp
  5. Green Chili – 1 (finely chopped)
  6. Curry Leaves – A few (optional)
  7. Rock Salt (Sendha Namak) – To taste
  8. Black Pepper Powder – A pinch
  9. Lemon Juice – From ½ lemon
  10. Fresh Coriander – For garnishing
  11. Oil (preferably Peanuts Oil) – 2 tbsp

Preparation Steps

Step 1: Preparing the Sabudana

To make the perfect Sabudana Khichdi, the first step is to prepare the sabudana. Wash the tapioca pearls in water, then soak them in just enough water (2-3 tablespoons) for 1-2 hours. Be careful not to add too much water, as it will cause them to become sticky.

Step 2: Frying the Peanuts

In a medium-sized kadhai (wok), heat the oil over medium flame. Add the raw peanuts and fry them until they turn golden brown. Ensure not to cook them on high flame, as they might burn and have a bitter taste.

Step 3: Cooking the Potatoes

Once the peanuts are done, add the boiled and diced potatoes into the same oil. Sauté them for a few minutes until they are slightly crispy and well-combined with the peanuts.

Step 4: Adding Spices

Add cumin seeds, curry leaves (if using), and finely chopped green chili for heat. Stir them for a minute until fragrant.

Step 5: Cooking the Sabudana

After the spices are cooked, add the soaked and drained sabudana. Sprinkle rock salt and black pepper powder on top. Mix all the ingredients well to ensure the sabudana is coated evenly with the seasoning.

Step 6: Final Cooking

Cover the kadhai and let it cook on low flame for about 2-3 minutes. This step allows the sabudana to become soft and fluffy.

Step 7: Garnishing

Once cooked, remove the lid and add the crushed fried peanuts, fresh coriander, and a squeeze of lemon juice. Mix well and transfer it to a serving bowl.

Serving Suggestions

Sabudana Khichdi can be served hot and is best enjoyed with a side of yogurt or a tangy green chutney. It’s a complete meal in itself and is perfect for a wholesome breakfast or a filling snack during fasting days.
